Ingredients

  • 5 pita breads

  • Pizza sauce, as needed

  • Pepperoni slices

  • Mushrooms, thinly sliced

  • Green bell pepper, thinly sliced

  • Roma tomatoes, chopped

  • Black or green olives, sliced

  • Red onion, thinly sliced

  • Hot banana pepper rings

  • 2–2½ cups grated mozzarella cheese, or to taste (see note below)

Directions

  • Preheat the oven. Heat oven to 425°F (220°C). (Line a baking sheet with parchment paper, if desired. I place the pitas directly on the over rack.)
  • Prepare the pitas. Spread a thin layer of pizza sauce over each pita, leaving a small border around the edges.
  • Add the toppings. Arrange the pepperoni, mushrooms, green pepper, tomatoes, olives, red onion and hot banana peppers over the sauce.
  • Add the cheese. Sprinkle the grated mozzarella evenly over each pita, covering the toppings.
  • Bake. Bake for 8–12 minutes, or until the cheese is melted and bubbling and the edges of the pitas are golden and crisp. For extra browning, switch to broil for the final minute or two, watching carefully.
  • Serve. Let the pita pizzas rest for a minute or two, then slice and serve hot.

Notes

  • I put these directly on the rack for extra crispiness and cover the lower rack with tin foil to catch the drippings and avoid a dirty over. 🙂
  • I grate a 400g mozzarella cheese block for 5 pitas.
  • Set out the toppings and let everyone build their own pita pizza. Extra banana peppers for the heat lovers, extra cheese for everyone else!
